For years The Wilderness has been one of Birmingham's most talked-about restaurants, and in February 2026 it finally got the recognition many of its regulars felt it deserved. At the Michelin Guide Great Britain & Ireland ceremony in Dublin, the Jewellery Quarter restaurant was named among 20 new one-star restaurants.

The Wilderness is the work of chef patron Alex Claridge, who describes it as rock and roll fine dining. It serves provocative, playful tasting menus inside a restored factory, set to a soundtrack of rock, punk and heavy metal. The dining room is dark and moody, and the mood is informal, which is exactly the point.

Claridge is self-taught rather than classically trained, and he draws inspiration from architecture, fashion, art and music. Before opening The Wilderness he worked as executive chef for a small vegetarian chain, and in 2020 he represented the Central region on Great British Menu.

The cooking is built on originality, balance and strong produce, with an in-house ageing programme and a focus on time, umami and fire. Michelin highlighted dishes such as artichoke chawanmushi and barbecued brassicas with brioche and truffle, served like a bread and butter pudding.

The star had been a long time coming. Claridge had pushed for it for around seven years, and he told Restaurant Online that he had even contemplated closing the restaurant and opening a French bistro. Instead, he returned to the kitchen full time in 2025, cooking alongside chef Ediz Engin. "I stopped cooking for an audience," he said. He described the night of the announcement as "fever dream stuff", and when asked how it felt, his answer was simple: "Does it feel good? Yes."

The team has not stood still. In 2024 Claridge and his partner Rachael Whittle opened Albatross Death Cult, a 14-seat chef's counter in the Jewellery Quarter focused on British seafood, with a ten-course tasting menu.

Alongside its new star, The Wilderness holds three AA Rosettes and appears in the SquareMeal Top 100 Restaurants list for 2026. For a restaurant that has always done things its own way, it is a fine reward for sticking to its guns.

Bookings and menu details are on The Wilderness website, and a table there remains one of the most memorable nights out in the city.
